A Celebrated Chef with Global Experience

Born in Sydney, Remy Davis is the head chef at Bessie’s Restaurant and Alma’s Bar, known for his refined approach to seasonal, open-fire cooking. His culinary journey includes experience at the Michelin-starred Elkano in San Sebastián, where he developed a deep appreciation for Basque-style grilling and wood-fired techniques.

For this special collaboration, Davis joins forces with OzHarvest chefs to design a unique four-course menu that showcases up to 95% rescued NSW produce, turning surplus ingredients into a world-class dining experience.
