Every menu is created using up to 95% rescued, fresh and seasonal NSW produce, transformed into memorable dining experiences by some of Australia’s leading culinary talents.
More than just a dinner series, the event supports OzHarvest’s mission of building a future where good food is never wasted and everyone has access to nutritious meals.
Each evening’s menu features:
- Two signature courses created by the guest chef
- Two courses prepared by the Refettorio OzHarvest culinary team
- A focus on rescued and sustainable ingredients
- Unique one-night-only dining experiences

Supporting the Next Generation of Hospitality Professionals
Guests attending the series will also be supporting the OzHarvest Nourish Program, which provides hospitality training and employment pathways for young people facing barriers to work.
Throughout the series, Nourish students work alongside guest chefs and the Refettorio team, gaining valuable hands-on experience in menu development, food preparation, service delivery and event operations.
