A Celebration of Sustainable Fine Dining
Join chef Jean-Paul El Tom, founder of Sydney favourites Baba’s Place and co-founder of Corner 75, for an intimate four-course dinner created in collaboration with OzHarvest chefs at Refettorio Sydney.
The menu showcases the beauty of up to 95% rescued NSW produce, transforming surplus ingredients into a refined dining experience that champions sustainability without compromise on flavour or creativity.
Each dish reflects El Tom’s cultural heritage and culinary journey, drawing inspiration from his upbringing in suburban Sydney and Lebanon, where a fascination with fermentation, preservation, and regional ingredients first began.
A Collaboration Between Leading Chefs
For this special Vivid Sydney edition of Our Shared Future, El Tom partners with OzHarvest chefs to present a carefully curated four-course menu, blending innovation, storytelling, and purpose-driven cuisine.
Two courses are created by Jean-Paul El Tom, with two additional dishes developed by the OzHarvest culinary team, making this a truly collaborative dining experience.
